Growing up, chicken salad was a staple in our home. While I love my mama's recipe, now that I'm cooking for myself I substitute the mayo (I think it's so gross 😜) for mashed avocado and mix in light craisins, relish, no-salt all seasoning, and fresh ground pepper and eat with Pop Chips vs. toast or tortilla chips.
It's the same flavor I grew up loving but with a healthier twist! Eating "healthy" isn't about cutting out all the things you love, it's just about making substitutions to make the foods you love support a healthier happier you! 👍🏼
1 c. shredded chicken breast
1 t all-seasoning
1 1/2 TB dill relish
2 TB sugar-free Craisins
salt + pepper to taste
1. Mash avocado in medium mixing bowl
2. Mix in all other ingredients
3. Serve with pop chips, wheat toast or in a piece of romaine lettuce.
