CRISPY BRUSSEL SPROUTS W. BACON, GARLIC + MUSHROOMS

The key to a good brussel sprout (IMO) is making sure that the outside leaves are nice and crispy. Most people I know think of this veg as soggy, soaked in a sauce or undercooked leaving them slightly bitter and tough to chew through. Broiling, baking or stir frying solves for this and makes them a delish + easy side dish. 

Here's one of my go-to recipes-

Ingredients-
Brussel sprouts
Chopped bacon
2 TB minced garlic
1 c mushrooms, cut 
Olive oil
Rock salt
Salt + Pepper

Directions-
1. Peel off any bad leaves from the outside of the brussel sprouts
2. Bring a pot of hot water to a boil and add a dash of rock salt
3. Add brussel sprouts to boiling water and let boil for 4 minutes
4. Quickly transfer brussel sprouts to a bowl of ice cold water 
5. Cut sprouts in 1/2 lengthwise
6. Add oil to saucepan on high heat and cook bacon for 1 minute, then add in brussel sprouts and mushrooms and continue to stir as brussel sprouts start to brown on the outside
7. Add garlic and stir/cook for 1 minute 
8. Drain mixture of excess oil and sprinkle with parmesan and red pepper flakes, serve while hot
